Ingredients 1 frying chicken, about 2 to 3 pounds pre-cut ½ cup all-purpose flour ½ cup corn meal 1 teaspoon salt ½ teaspoon ground black pepper 1 cup buttermilk canola or peanut oil for frying 1 tablespoon onion powder 1 tablespoon of garlic powder Preparation: 1. Wash chicken thoroughly. 2. In a bowl combine flour and corn meal, pepper, onion powder, garlic powder, and salt. 3. In another bowl combine milk and eggs. Beat until fully mixed. 4. Take each chicken part and dip first in milk./egg mixture, then dip both sides of chicken pieces in flour mixture until full covered on both sides. 5. Next place in empty container. 6. Pour 2 to 3 inches of oil into heavy skillet or frying pan. And turn on medium heat for 5 minutes. 7. When oil spatters or crackles when a drop of liquid hits the surface (usually around 5 minutes) slowly place battered chicken pieces into hot oil. 8. Fry one side of chicken until the bottom and sides are golden brown and reddish liquid starts to form on the top (usually 7 to 10 minutes) when that happens, turn chicken over. 9. Chicken is done when poked with a fork and clear juices appear.(Usually 7 to 10 minutes on each side). 10. When chicken is done, drain in a strainer or place on paper towels then transfer to serving dish. Serves approximately 4 people
